In Latvian homes rye bread has always been a staple dish, earning it a place among the things, places and ideas considered to be Latvian symbols today. Traditional Latvian rye bread is made from flour of local grain varieties that have been grown here historically; it is fermented with natural sourdough, hand-made and baked on the hearth of a wood-fired bread oven. Salinātā rye bread has a deep, dark colour, a pleasant aroma of baked bread and caraway seeds, and a sweet and sour rye bread flavour.
