Silmači ir ģimenes saimniecība, kur no pašu kazu piena top dažādi kazas piena sieri.

Celmi farm

The farm offers a wide range of smoked cheese (plain, with caraway seeds, dill, garlic, red peppers, basil, seeds and nuts), homemade cheese (with caraway seeds, garlic, basil, hemp, dried tomatoes, olives, marinated grape leaves, etc.), spicy homemade cheese (with curry, rosemary, dill, parsley), and sweet cheese (with fruits, candies and cranberries).

Nīcas siers

Nīcas siera ražotne atrodas zemnieku saimniecībā “Birzmaļi”, kas ir viena no lielākajām piena ražotājām Lejaskurzemē.
Sieri:

  • Svaigais siers – mocarellas tipa svaigais siers ar dažādām piedevām, piemēram, ķimenēm, baziliku un papriku, kā arī citām rūpīgi piemeklētām garšām.
  • Puscietais siers – gatavots pēc Nīderlandes siera metodes, kas piešķir tam maigāku, nedaudz saldenu garšu un elastīgu tekstūru. Siers tiek nogatavināts no trijiem līdz pat divpadsmit mēnešiem.
  • Cietais siers – recepte balstīta Itālijas siera tradīcijās. Tas izceļas ar izteiktu garšu un raksturu un tiek nogatavināts sešus vai divpadsmit mēnešus, iegūstot bagātīgu un niansētu garšas buķeti.

Lapsu Mājas sieri tiek gatavoti Ogrē mājražotāja Jāņa Lapsas virtuvē.

  • Mājas siers ar samazinātu sāls daudzumu no govs piena (pieejami ar 27 dažādām garšām).
  • Bezlaktozes mājas siers ar samazinātu sāls daudzumu no bezlaktozes govs piena. 2021. gadā kā pirmie sāka ražot bezlaktozes sierus no govs piena.
  • Jāņu siers ar sviestu vai ar saldo krējumu.

Some 10 kinds of fresh goat cheeses (with herbs or greens), as well as smoked ones.

Rehtšprehera siers

Rehtšprehera siers top Siguldas novada zemnieku saimniecībā “Mazlauri”.
Sieri:

  • Cietie sieri (nogatavināti 6-12 mēnešus): Grand Marine, Gouda 8 mēnešus gatavināts.
  • Puscietie sieri (nogatavināti 2-4 mēnešus): Gouda (pieejams ar linsēklas eļļas pārklājumu vai ar speciālu siera pārklājumu), Tallegio (pieejams ar balzamiko etiķa pārklājumu vai speciālu siera pārklājumu), Toskāna, Sorento.
  • Daži sieri ir pieejami arī ar piedevām, piemēram, melnajām ķimenēm, pipariem, tomātiem un baziliku, tomētiem, ķiplokiem un oregano. Daļai sieru ir ēdama miziņa.
  • Uz vasaras saulgriežu laiku tiek gatavots arī kas līdzīgs Jāņu sieram – nogatavināts siers ar ķimenēm.

The Juri farm

Cow milk cheeses from the farm include “Juru” cheese, which is a white cheese, “Jurjānu” cheese, which is cheese with caraway seeds, “Martinella,” which is a version of Mozzarella, “Rušona” cheese, which is made from fresh milk, and “Pakša” cheese, which is traditional dried Lettigalian cheese made from cottage cheese.

Dvietes īstais lauku saldējums

The true country ice cream at Dviete is provided by a family company which makes ice cream from locally sourced milk and barriers.  There are no E-substances, no plant oils, and less sugar than is common.

The cows which provide the milk are not kept in sheds.  They graze in the biological pastures of the Dviete wetlands.  They are known as “happy cows,” and the milk ensures a unique taste for the ice cream that is made of it.  The café offers homemade ice cream and waffles, as well as delicious coffee in a lovely and well-appointed place from which you can see the lovely and extensive Dviete wetlands.

Groups can contact the ice cream café to arrange for tastings or master classes on how ice cream is made.

The “Mežinieku mājas” guesthouse

Cheese here is based on recipes from the owner’s granny, with more than 14 types in all, savoury, sweet, smoked, green, etc.  Master’s classes are available, including the preparation of cheese on a campfire.

Some 30 kinds of cheese, including fresh and smoked Mozzarella, spicy cream cheese and cream cheese with tuna Russian cheese, Latvian cheese, Dutch cheese, Ugliča cheese, “Bakšteins,” “Massdamers,” etc.

Blūdži farm

~30 types, including “White” cheese, “Cheese with seeds,” “Cheese with caraway seeds,” “Cheese with fenugreek,” “Cheese with dill and garlic,” “Special” Cheese (with mixed herbs, mustard seeds and garlic), “Spanish” cheese (with dried tomatoes), “Ukri taste” cheese (with red and green peppers and garlic,” “Champion” cheese (in honour of the family’s sons, who are rugby champions in Latvia; with dried dill, parsley, chives and garlic), two types of marinated cheese (simple and in a chili and honey sauce).  All of the cheeses except for “Ukri taste,” “Champion” and the marinated cheeses are smoked.
