Casa Bianca is a hard goat’s milk cheese, matured for approximately two months. It has a mild, slightly buttery flavour with a subtle nutty note. The cheese melts beautifully and is easy to grate, making it ideal for cheeseboards as well as for cooking.
Pecorino is a hard goat’s milk cheese, matured for between four and ten months. This distinctive, mature cheese has a rich, gently nutty flavour. As it matures, its aroma and texture become increasingly pronounced, making it excellent for leisurely enjoyment with wine, on a cheeseboard or grated over warm dishes.
Gran Capra is a hard goat’s milk cheese, matured for between 12 and 24 months. This cheese is a true connoisseur’s choice, with a deep, concentrated flavour and an exceptionally rich character. With age, it develops a crumbly, crystalline texture, making this small-batch, seasonal cheese a particularly special treat.
