Pecorino is a hard goat’s milk cheese, matured for between four and ten months. This distinctive, mature cheese has a rich, gently nutty flavour. As it matures, its aroma and texture become increasingly pronounced, making it excellent for leisurely enjoyment with wine, on a cheeseboard or grated over warm dishes.
