"Pavasaris" cheese is a soft cow's milk white mold cheese that is matured for 28 to 35 days. Before maturing, it is sprinkled with dried herbs, which are overgrown with white mold, creating a spring-like fresh aftertaste.

Taste description Before ripening, it is sprinkled with dried herbs, through which white mold grows. The presence of herbs, in addition to the characteristic forest, earth and mushroom notes, creates a spring-like fresh aftertaste. Excellent in the company of dessert wines, as well as with fruits, especially stone fruits (plums, apricots, nectarines)

Additional information "Pavasaris" cheese has similar white mold cheeses in other seasons – the turmeric-sprinkled Vasara, which gives a full-bodied aftertaste and goes perfectly with berries or tomatoes, and the paprika-enriched Rudens, which goes perfectly with heather honey or nuts. Both of these soft cow's milk cheeses are matured for less than a month and become pleasantly pliable over time.
