"Fresh goat cheese" is an unripened, medium-fat to low-fat cream cheese made from pasteurized goat's milk. It has a juicy, slightly moist texture and a light, airy, mild flavor without additives, in which the natural sweetness of goat's milk is pleasantly felt.
