At LATS shops in Nīca, the cheese stall at Liepāja’s Pētertirgus market, the home-producers’ shop Martas kiosks in Grobiņa, the shop at the Rāmkalni leisure complex and the Dzintariņš café in Bernāti. Private orders are also welcome.
“Nīcas siers” in South Kurzeme Municipality does not receive visitors at its production facility on a day-to-day basis; however, by prior arrangement, a cheese tasting can be booked for organised groups of 15 people or more. The tasting, which lasts about an hour, is led in Latvian by the owners themselves. Guests are received in a specially set-up reception and tasting area, where they can sample a variety of cheeses. The cheese can be purchased on site, as well as at various home producers' markets in Liepāja. It can be tasted at the “Dzintariņš” café in Bernāti and at the restaurants “Parka Paviljons” and “Spīķeris 53” in Liepāja.
Fresh cheese is an elastic and dense semi-hard cheese that has a mild, distinctly milky flavor, and its natural yellowish rind is completely edible.
The semi-hard cheese is made according to the Dutch Gouda cheese method, the so-called washed cheese. During the formation of whey and curd, some of the whey is replaced with water, thus the reduced amount of lactose makes the cheese sweeter, softer and more elastic.
This long-aged cheese has a notably firm, dense and pleasantly granular texture, with a rich, intensely flavoured character and a lingering finish. The hard cheese is made to a recipe developed in Italy.
