'Pakša'-Käse
Pakša ist ein traditioneller Hartkäse aus Latgale mit einer dichten, krümeligen Konsistenz. Er wird aus Rohmilch hergestellt, reift 1–2 Monate ohne Rinde und hat einen kräftigen, herzhaften Geschmack.
'Jāņu' Käse
Jāņu-Käse ist ein frischer Sauermilchkäse mit Kümmel. Er ist sonnengelb, fest und elastisch, hat einen mild-würzigen, buttrigen Geschmack und ist ein traditioneller Mittelpunkt der lettischen Sommersonnenwendfeierlichkeiten.
