Silmači is a family-run farm producing a range of goat’s milk cheeses made from milk from its own herd. Cheeses: A varied selection of goat’s milk cheeses, from fresh and mild varieties to distinctive smoked cheeses and long-matured hard cheeses. The range includes classic fresh cheeses, herb-infused varieties and richly flavoured smoked cheeses.

Silmači is a small family farm where a range of goat’s milk cheeses is made from milk produced by the farm’s own goats. Cheesemaking has been developed gradually, combining local rural traditions with knowledge and experience gained through study and practice both in Latvia and abroad.

How the Cheese is Made
The cheese is made from high-quality goat’s milk sourced both from the farm’s own herd and from a trusted local dairy producer. The goats are raised in a rural setting and fed natural, home-grown feed, which contributes directly to the flavour and quality of the milk.

The cheese is made from fresh milk, with every stage of the process carefully controlled, from milking through to maturation. Each cheese is made by hand, allowing the natural character of the milk to shine through and develop into a distinctive, nuanced flavour.

Fresh cheeses are made using simple methods passed down through generations, while the semi-hard and hard cheeses draw inspiration from traditional Italian recipes, including cheesemaking traditions dating back to ancient Rome. These methods are adapted to give each cheese its own character and flavour.

For Visitors
Visitors can discover the goat farm and hear the story of how the cheese is made directly from the people behind it. From April to October, seasonal tastings offer the chance to sample a selection of goat’s milk cheeses and other products made on the farm.

Visitors can meet the goats and kids, learn about their daily life, hear stories and anecdotes from the farm, and take time to enjoy the peaceful rural surroundings. A play area is available for younger visitors.

Workshops are also available for small groups, following the journey from goat to table and exploring how cheese, butter and curd cheese are made.
