The cheese is sold at local markets, throughout Latvia and in restaurants.
Pakša cheese is a traditional hard cheese from Latgale, with a dense, crumbly texture. Made from unpasteurised cow’s milk, it is matured for 1–2 months without a rind, with a robust, savoury flavour.
Jāņu cheese is a fresh sour-milk cheese with caraway seeds. Sunny yellow, dense and springy, it has a gently tangy, buttery flavour and is a traditional centrepiece of Latvia’s summer solstice celebrations.
