Smoked cottage cheeses are unripened cow's milk cheeses with a dense, medium-hard and easy-to-cut structure. The smoky aroma and pronounced taste obtained from alder wood smoke ideally complement both classic cheese and variations with cumin, herbs, seeds or nuts.
