Таверны, кафе и другие места в сельской местности и малых городах, где предлагают вкусные блюда, приготовленные из свежих местных продуктов и по традиционным рецептам латышской кухни, которые в каждом крае Латвии различаются.
Привлекая группы посетителей, разрабатываются особые программы, во время которых не только подают блюда, но и рассказывают о связанных с ними праздничных и ежедневных традициях, поют песни. Иногда программа предусматривает и привлечение посетителей в процесс приготовления блюд.
В меню используются местные названия блюд с пояснениями, местный диалект. Предлагая латышскую кухню, также и в интерьере используется этнографический стиль или изделия местных мастеров – посуда, мебель, текстиль и т.д.
